In the Food Biochemistry Lab, we are conducting research on the detection methods of GMOs and foodborne pathogens, the safety assessment of GMOs, and development of functional fermented foods using various biochemical and molecular biological technologies.

The qualitative and quantitative analysis of GMOs and food pathogens has been developed using PCR and DNA chip. We have also performed the safety-assessment of GMOs using enzyme digestion, immunoblotting and sequence comparison. In addition to the research on development of functional fermented foods, specific microorganisms were selected, analysed and applied to functional kimchi and doenjang.
