Our researches in the Laboratory of Food Microbiology & Biotechnology (LFMB) are focused on the molecular biological and biotechnological studies of various food microorganisms and their applications in food-related industries.


Our lab always welcomes students who are eager to be a young scientist with Fundamental logic, Magnificent dream, and Big heart (FMB).

- Expression, production, and application of carbohydrate active enzymes using GRAS level microorganisms.
- Production of various high value-added functional bio-materials including isoflavones and ginsenosides by transglycosylational modification via various carbohydrate active enzymes.
- Metabolic engineering of various fungal strains such as Aspergillus oryzae, a famous fungus in traditional Korean foods and Aspergillus terreus, an antihypercholesterolemic agent producing fungus.
